Love this dish!  Use any vegetables you like. Super quick and great to take to a gathering.

 

Raw Vegetable Curry

The sauce really makes this dish, like any salad the dressing is key! It's a winner eveytime.

Equipment

  • 1 Blender

Ingredients
  

  • 1 Organic Tomato
  • ½ Orange
  • Orange zest
  • Handful of organic sunflower seeds
  • 1-2 Scoops Organic almond butter
  • pinch Himilayan rock salt, dulse flakes
  • pinch Organic cayenne pepper
  • 1 Tbsp Organic curry powder
  • 1 tsp Organic Turmeric
  • 1 tsp Organic Maple Syrup
  • Lemon Juice (squeeze)
  • ¼ Cup Distilled water

The above ingredients make up the Sauce.

Below Ingredient suggestions for the Salad - Use what you like.

  • 1 Raw Organic Carrot , thinly sliced
  • ¼ Head of organic cauliflower, into bite size pieces.
  • ¼ Cup Organic Broccoli, sliced thinly
  • ¼ Cup Kohal Rabi, thinly sliced

Instructions
 

  • Blend all sauce Ingredients together
  • Chop/Slice all chosen raw organic vegetables
  • Pour sauce ingredients over vegetable and servce

Notes

This dish would also be nice with the veges cooked or just blanched, but really nice to have raw with some crunch. Some organic sunflower seeds or Sesame Seeds go nice sprinkled on top.
