Raw Blackcurrant Crackles
These raw Blackcurrant Cookies are super easy to make.(BTW, they don't actually crackle!)
Equipment
- Dehydrator
- truffle paper cups or small muffin molds
Ingredients
- 50 gm Raw organic Cashew or Macadamia nuts I used Walnuts in this recipe
- 50 gm Soft Dried Organic Blackcurrants or your could use other dried berries, blueberries, Goji, Raspberries, etc
- 30 gm Raw, Organic Cacao Nibs
- 10 g Fresh Citrus Zest, i.e orange, lime
- 2 tsp Raw, organic almond butter
- 50 gm Raw organic Cacao butter Chopped or grated
Instructions
- Rinse nuts and chop into small pieces and dehydrate until dry.
- Also while drying nuts, you can melt the cacao butter in the dehydrator.
- Chop berries you are using into small pieces along with the nuts.
- Transfer berries, nuts into a bowl and add citrus zest and almond butter and essential minerals if you are using.
- Stir in melted cacao butter and mix lightly. The mixture should resemble coarse sand.
- Scoop 2 teaspoons of mixture into paper cups or molds and place in fridge to set.
- Due to the fresh citrus zest the mixture, use within 7 days.
