Raw Blackcurrant Crackles

These raw Blackcurrant Cookies are super easy to make.
(BTW, they don't actually crackle!)

Equipment

  • Dehydrator
  • truffle paper cups or small muffin molds

Ingredients
  

  • 50 gm Raw organic Cashew or Macadamia nuts I used Walnuts in this recipe
  • 50 gm Soft Dried Organic Blackcurrants or your could use other dried berries, blueberries, Goji, Raspberries, etc
  • 30 gm Raw, Organic Cacao Nibs
  • 10 g Fresh Citrus Zest, i.e orange, lime
  • 2 tsp Raw, organic almond butter
  • 50 gm Raw organic Cacao butter Chopped or grated

Instructions
 

  • Rinse nuts and chop into small pieces and dehydrate until dry.
  • Also while drying nuts, you can melt the cacao butter in the dehydrator.
  • Chop berries you are using into small pieces along with the nuts.
  • Transfer berries, nuts into a bowl and add citrus zest and almond butter and essential minerals if you are using.
  • Stir in melted cacao butter and mix lightly. The mixture should resemble coarse sand.
  • Scoop 2 teaspoons of mixture into paper cups or molds and place in fridge to set.
  • Due to the fresh citrus zest the mixture, use within 7 days.

Notes

I use the Plasmatic Ionic Essentials in most of my creations as the body is continually needing remineralising.
For other variation you could replace the Blackcurrant Powder for Cacao, but the Blackcurrant is a nice boost of Vitamin C.
